We love blueberry and fruit flavoured muffins in my house and they are a great way of getting extra fruit into your diet, especially with Miss 2 being fussy at times and refusing to eat any fruit. However blueberries are one of her favourites so luckily when it comes to blueberry muffins she doesn't take to much convincing. We normally always have a bag of frozen blueberries in our freezer for using in smoothies or blueberry muffins and pies they are so convenient and easy to grab out.
As much as I love trying out new recipes from scratch and creating my own twists on these, I also like to have a pack or two of baking mixes in my pantry for those times when you need something quick and easy. I saw that Edmonds had brought out a blueberry muffin mixture so decided to give it a go. I prepared the muffin mix simply with only a few extra ingredients egg, oil and water and mixed it all together until just combined. The next step was to swirl in the blueberries, these came ina pouch and in my opinion were more like a jam, I was a little dissapointed as I expected to see actual blueberries, none the less I had some in the freezer so added half a cup to the batter.
Once they wee cooked I couldn't wait to try, they were quite moist, but no as flavorsome as I would of hoped for, I was happy that I had added my own blueberries from the freezer. They definitely don't compare to the homemade blueberry muffins, but are fine for if you want something easy to whip up, Miss 2 loved them.
I love traditional blueberry muffins made with fresh blueberries and despite them being somewhat healthy with real fruit in them my kids love them too. I normally don't use mixes like these and start from scratch using a recipe but needed to make something in a hurry for a play group I had planned at home the other day so bought one of these boxes from the supermarket.
The kit is so easy to use you just add oil, water, and egg, mix and bake so it is really easy. The blueberry comes in a seperate pouch that you swirl through the mixture once it is all combined. I was expecting it to be just blueberries being blueberries but it was more of a jam type consistency and also contained blackcurrant and apple so was a bit different from what I was used to but still ok.
Because of the apple and blackcurrant flavour that really does come through in the taste of the cooked muffin they aren't the same taste as traditional blueberry muffins but my kids still liked them. I prefer home made with real blueberries but I would use the kit again for the sheer convenience and quickness of using it.
