Chocolate fettucine with chocolate cream sauce Pasta
• 2 Tbsp cocoa
• 2 Tbsp hot water
• 2 Tbsp castor sugar
• 2 eggs - beaten
• Half cup of strong pasta flour
Combine cocoa, hot water and sugar and mix into a paste
Add cocoa paste into the flour with the beaten egg.
Knead the pasta dough for 5mins - rest.
Once rested, roll out dough and cut into fettucine strips with a pasta machine or a knife.
If dough is a little wet, work the dough with a little flour.
Cook off in boiling water for 10mins - refresh.
Chocolate sauce
• 250g cooking chocolate
• 200ml cream
Place cream and chopped chocolate into a saucepan and simmer until a thick sauce consistency is reached - if too thin, add more chocolate and simmer.
Stir chocolate fettucine into the warm chocolate sauce.
Serve in a bowl with dallops of mascapone fresh cheese on top.
