I love baking but often don't get the time to do anything too fancy with three kids and a job. I loved the look of these baking mixes because every baking mix sounds super fancy and different to the normal. What is also great is that the recipe mixes are free from refined sugar, dairy, and gluten which makes them really appealing for families with allergies or those just wanting to make healthier choices.
I was sceptical on whether my children would like these cookies they love ginger crunch and ginger nut biscuits but putting it in the better for you category is always a gamble with my kids. However this was short lived as they smelt the cookies as they were baking and we're eager to try them as soon as they came out of the oven. I can one hundred percent say my children loved them. Despite being free of refined sugar and not sickly sweet like some biscuits these are really tasty and definitely moreish. My eldest son who I swear is going through a major growth spurt ate three cookies and had to be told no more!
The instructions on the package are really easy to follow and the cookies are really quick to make requiring only water and coconut oil to make your cookie dough. I loved that the packaging was also compostable. It's great that not only are the baking mixes inside better for you but the packaging is better for the environment too.
We have both a coeliac and a vegan in the family and I am more than aware that gluten free and vegan products can carry hefty price tags so for that reason I feel these baking mixes are reasonably priced. Though they are more expensive than generic baking mixes they are definitely worth that extra price tag and reflect the more expensive ingredients used. I will definitely buy these baking mixes again and having read other reviews on the other products in the range I have a few I want to try next already!
We are a ginger nut-loving family who often has a supply stashed in the cupboard to enjoy with a nice cup of tea! Unfortunately, as I age, I am becoming more aware that my waistline does not appreciate sugary treats of any kind. I was looking forward to trying Unrefined Cakery's Ginger Buckwheat Cookie Mix as a healthy alternative. The mix comes in a clear bag with a lovely picture of the cookies on the front. The packaging is compostable which is great, and the mix claims to contain functional foods, these being all recognised ingredients with no additives, preservatives, or an odd ingredient. All I needed to provide was melted coconut oil (I'm sure any other oil would suffice) and water. No eggs, nothing else.
The pack is resealable which I thought was a little odd as you use the whole packet to make the cookies. The cookies themselves were extremely easy to make and came out looking great. They weren't overly gingerly but did have an almost gritty texture that I wasn't that keen on. Although they contain coconut sugar (which was the second most used ingredient) they weren't very sweet. Both daughters tried them and I could tell by their faces that they didn't like them and they haven't asked for any more. I wasn't that keen on the taste and texture myself.
That evening we had friends come over for dinner and one of them is following a Keto diet. I served these as an additional dessert and gave the packet to my friend to read, explaining that although they still contained sugar, he might like them. Both friends tried them and proclaimed how lovely and tasty they were, so much so that I ended up giving them a cookie care package to take home with them.
So, whilst they weren't my personal favourite, I do appreciate that others will really like them as they're nice and healthy. Being refined sugar-free, gluten-free, dairy-free, nut-free, and vegan will appeal to many people, but I can't say that I will be buying them again.
Miss Nine loves to cook. She is fast becoming capable of cooking an entire meal on her own, with minimal adult supervision, and the results are usually pretty good. When she saw the cookie mix, she immediately asked if she could make them. I told her that was fine, and that the instructions looked pretty straightforward. The response was that she was sorry about that as she rather likes a challenge, but she took the packet all the same and started reading the instructions for herself.
The pot of coconut oil was fetched from the pantry, and Miss Nine measured out what she hoped would be 60 ml when melted. Her guess was perfect; once it had turned to liquid, the jug measure registered 61 ml. I was impressed and she was delighted; she decided to leave the extra 1 ml there as it probably would not affect the result too much. Throughout the mixing process I watched her; she insisted that she could do everything herself, and did! The dough was still slightly crumbly after she had been squishing it round for a while, first with a fork and then with her hands, so she added another splash of water: that was just right.
She had forgotten to preheat the oven so I turned it on for her while she formed the mix into little balls. This was fun; she lined them up on the tray before squishing them down into flat biscuit shapes. She ended up with 16, slightly more than the 12-14 suggested on the packet, but decided to go with that number rather than trying to redistribute the mix. I was asked to put the tray into the oven for her as this is the one thing she is not quite able to do on her own yet. The kitchen was quickly filled with the most delicious smell of ginger - we were getting hungry just watching the progress through the oven glass door. We cleared the bench in anticipation. Not that there was much to move; because the cookie mix contains most of the ingredients, there was just the coconut oil to put back plus a couple of kitchen utensils. I wish cooking was always like that!
Once the biscuits were cooked and had cooled, we all tasted one. The adults all enjoyed them; my daughter dunked hers in her coffee and said it was just the right texture. It started off crisp but went softer once it hit the hot liquid, and held its shape. I ate mine on its own and thought it was quite like a gingernut but slightly denser; I was quite full after I had finished it. Mr 11, who is permanently hungry, made short work of two. Miss Nine, on the other hand, was not so keen even though she had cooked them herself. The ginger was a bit too intense for her, but as her taste buds mature she will probably come to like it. We also thought she might have cooked them slightly too long; next time we will aim for 20 minutes rather than 25.
The price is somewhat steep for a batch of cookies, but there are several points in favour of buying this product. The ingredients are all healthy. There are no fillers or unnecessary preservatives, just good honest food. Secondly, the packaging is fully compostable. And lastly, some of Miss Nine's friends have food allergies. This can make it really difficult when the children get together as one is severely allergic to nuts and another cannot eat dairy products. A third is vegan as are her whole family. So this cookie mix would be perfect for them - and unlike Miss Nine, they all eat ginger! I have already mentioned the ease of preparation which is yet another thing to consider. I am sure we will be buying this mix again in the future.
