Most preservers boil fruit at high temperatures which causes much of the flavour to be lost in the steam. The desire to produce higher quality preserves at Barker's has led to the use of the Barker's vacuum cooker. This special cooker gently boils the fruit and retains all the subtle flavours - a unique and loved character of Barker's jams and preserves.

In our household there is one spread which stands head and shoulders above the rest, one spread to rule them all, the zenith of all spreads - lemon curd. You just cannot beat the perfect blend of sharp lemons, sweet sugar and creamy butter to give the ultimate comfort food. However, so much of the lemon curd we have come across leaves us disappointed. Neon yellow, artificial in flavour, not enough lemon, too much sugar, no trace of butter - we have experienced it all. So much so that we had stopped buying it all together for fear of disappointment. However, on seeing this Barker's NZ Squeezed Lemon Curd, I was intrigued as it looked so much like homemade. Having had such a good experience with products in their range in the past, I was tempted to try it.
First of all, we cannot overlook that the spread comes in a glass jar, with a proper metal lid and a really informative label. Huge ticks from us in terms of sustainability and accessibility. The texture of the product is just right - Soft enough to spread easily, but firm enough to give a decent layer on a piece of toast without running off with the heat. However, the best bit about this product is the taste. Barker's really has got this spot on- tart and juicy lemon perfectly in balance with the sweetness, and a really rich buttery aftertaste meaning you can be assured of the quality of the ingredients within. It is so moreish that you could (and we have been known to) eat it with a spoon on its own. It keeps you coming back for more, and we are always disappointed to get to the end of a jar.
This spread is so versatile that it isn't just for toast. I have used it in cakes, in icings, as a quick filling for lemon meringue pie and lemon slice, and as a beautiful accompaniment hot or cold to a pavlova. The uses for this product are simply endless, meaning that you simply cannot go wrong buying a jar.
Overall, I cannot sing the praises of this spread highly enough. I cannot see how anyone would be disappointed buying a jar, and I would urge everyone to own one as a store cupboard staple. Barker's, I cannot wait to see what you do next - bravo.
Lemon curd holds a very special place in my childhood memories. I am still very partial to it and will take any opportunity to try any version of it - either bought or homemade.
I already know and love the Barker's brand so it was a must that I had to try their New Zealand Squeezed Lemon Curd. The first taste was great as it wasn't too sweet, in fact it was a little on the tart side. It has a very smooth texture and this suits me just fine as I am not into bits of peel in lemon curd (something I often find it in homemade versions that people make).
It is fantastic to see that Barkers are taking care of peoples health by reducing the amount of sugar in this line of spreads. In fact, I preferred it to the sweeter versions of lemon curd I have previously had. I don't have access to the older versions of the Barker's Lemon Curd in order to see how much the sugar has been reduced by but I did compare it to the jam we usually have in the house and the sugar content on the jam was 61.9% and the Barkers Lemon Curd came in more favourably at 54%.
In order to test it as a dessert option, I whipped up a batch of waffles. I knew that it would be good..but I had to try it out (life is hard sometimes!). I heated some lemon curd so that it was like a pouring sauce. I added a few blueberries and some whipped cream and it made a tasty dessert. I also had a look on the Barkers website and found that there are some nice recipes there - the mini Lemon Meringue pies are a must to try I think! They are very simple and would have to be delightful.
Overall, I enjoyed the lemon curd and liked the fact it was on the tart side. Barkers brand is a favourite of mine and one that I am likely to buy in the future.
Two of my daughters like it. They said it's quite sweet but don't like the after taste and would like me to buy it again. The oldest can't have it as it has egg and this is thank goodness printed in bold.
I personally don't like it as it doesn't pack enough punch for me and I miss the zesty bits. The label is pretty cool and makes a change from those budget tacky stickers some company's have. I loved the art work but question if they really need to tell us three times that they have left out some sugar and added more fruit. I do question if one of the other Barkers products may better suit my palate.
I'd like to try this in biscuits or as a fruit topping on either ice cream or cheesecake but sadly will have to buy more as this hardly lasted and was half empty within three days. Who measures out a serving though, does that one serve go onto on piece of toast, it definitely does in this house.
Overall, I would suggest this to someone who doesn't like the chunky bits or tangy and also perhaps nana, who can only have a limited amount of sugar. Daycare likes it because there is no risk of nut contamination.
We love lemons in our house, in particular lemon meringue pie and lemon meringue cupcakes. I decided against making these and opted to go for something a wee bit different! Christmas day was the perfect day to try this out. I made a white chocolate cheesecake but it needed some form of "sauce" on the top. I grabbed a pot, threw in some of the lemon curd, a small amount of water to thin it down a bit and chucked in some raspberries and boysenberries. Gave it a few minutes on the stove to mix and melt.. One word AMAZING!
The lemon flavour wasn't too overpowering but had a nice tang or a kick to it afterwards. The one thing I find with some curds is that they are too sweet and don't do the lemons justice, because let's face it lemons are not meant to be sweet they have an amazing sourness to them.
The smell when I opened it made my mouth water. It tasted amazing on its own and I would think this would be a perfect topping on some warm scones as well. It is a very universal cupboard item that can be used in a broad range of daily uses. Stirred through yoghurt, added to pancakes, made into a syrup dressing the list is endless! Fantastic product, I love it and it is now on my shopping list to get some more!
I love lemon curds, most of them are really sweet though so I can only stand a little at a time. When I got to review this one I was actually excited had things going though my head on what I could do with it apart from just eating it on toast which happened a lot cause its so yummy. It found it wasnt really sweet but had that sour kick to it that lemons are MEANT to have to them. Once having it on toast I had to think of other ways, my daughter and I made banana muffins and I popped a teaspoon on top of each one before putting in the oven and thinking it was going to turn out wrong I didn't hold my breath. In fact the muffin grew up around it and leaving a bit of lemon goodness on top when you bit into it you had some nice soft lemon gooyness to eat. Was yummy cause you know banana and lemon are awesome together.
Thinking of something else I make a yummy lemon custard and thats what I felt like for lunch so instead of using lemons which I didn't have for the zest Lemon curd was used instead, now I only used a tablespoon and after cooking and tasting this wasnt enough so I added another 2 tablespoons stired them in, added some blueberries and then put another tablespoon on top to stir in as I ate. O that custard was the best. Sadly it needed so much I'm almost out of lemon curd, so might have to go out and buy another one. Lucky the custard isnt an every day thing but was really good anyway.
The price of it is a little high for me as a mother of 2 and on my own. but when I have a bit of extra I will grab some as I do enjoy it on my morning toast and as a treat for the custard and when I do banana muffins, cause well they were so good.
I am extremely fond of Barkers products and have used their Lemon and Passionfruit Patisserie Filling which was a lovely lemony flavour. I was really excited to receive the Lemon Curd for review. A couple of years ago I had made some Lemon Curd as an ingredient for truffles I made for a wedding. I was looking forward to seeing if it resembled 'home made' curd.
When the curd arrived I was impressed with the 'old fashioned' jar and the beautiful details on it. I particularly like that this is a New Zealand product with such an authentic feel. I couldn't wait to try the curd in a recipe and had to dip a spoon in to try it straight away. Gosh was I impressed of what! It is the perfect tartness and was just as good (if not better) than my own 'home made' version.
In the past week and a half I have used the jar in a variety of ways. It was a wonderful topping with some Greek yoghurt on the pancakes we enjoyed on Boxing Day. It was a little too tart for the children but I found it just right. It reminded me of when I was little and mum would drizzle lemon and sugar onto pancakes. Expect this was a little more gourmet!
I have been experimenting with overnight oats in the past few months. Basically you use old fashioned oats, Greek yoghurt, chia seeds, milk or coconut water and a fruit. I ran out of berries and couldn't face the supermarket during the Christmas rush so trialled the Barkers product I received for review. WOW the lemon was amazing in it. When I did get some berries, I paired it with blueberries and it was a taste sensation.
I have used this in a dressing for a broccoli and cashew salad, it was a little over powering (perhaps I added too much to it) but with a bit of a play I imagine you could create something amazing. I added a dollop to some muffins I had in the freezer to jazz them up a little and it was a lovely addition.
All in all this is a wonderful product that is extremely true to its name and I reckon if I put it in an unmarked jar and gave it to someone as a gift - no one would be any the wiser that I hadn't made it from scratch! Its a great price and I have spotted it in my local New World so I know I can source some more of this liquid gold. 10/10 from me - well done Barkers!
i absolutely love lemon curd and didn't hesitate to put my hand up for this product to review. I knew that I could do heaps of things with it, I usually have it on my toast.
I opened the bottle and I could smell the lemon which is always a good sign. I had to take a teaspoon and have a taste and was very tempted to eat the entire bottle to myself it was that yummy but I had decided to bake and taste what it would taste like in a cake. I used the Betty Crockers Vanilla Cake Mix and put half in one loaf pan with some of the lemon curd mixed in and the other half in another loaf pan with some spoonfuls dropped on top to see what would happen.
The kitchen started to smell nice and I checked on the baking, the one was done but the other needed a bit longer. When I took the one with the spoonfuls dropped on the top of the mixture out of the loaf pan it came out cleanly and I noticed that the lemon curd had settled onto the bottom but when I turned the other one with the lemon curd mixed into it out the loaf pan I noticed that half of the loaf stuck to the pan so not only did it take a bit longer to cook but about half was still in the pan.
The true test is in the taste, both tasted nice but the one with the lemon curd mixed through tasted a bit diluted so the lemon taste was not that strong but still enjoyable but the other one still tasted like vanilla but the lemon curd on the bottom made a really nice strong taste in those bits. I would try this again in baking but probably more using spoonfuls dropped into the mixture as I enjoyed the strong lemon taste.
I still have about half a bottle left so I'm going to enjoy having some with my toast. This is definitely a lemon curd I'm going to be buying.
I was lucky enough to be given this lemon curd to review... and I say lucky because I'm a huge lemon curd/lemon honey fan but when presented with the different options at the supermarket, it's hard to know what's good and what's not so good.
I love a bit of a tang to my lemon spread - I mean if I'm going to eat lemons, then I need to get a lemon tang or I may as well just have a jam. I was pleased to find this had a slight tang to it, and a really good lemony taste.... however not an overly strong tang which is just the way I like it.
Mostly I love to have my lemon spreads on warm toast with butter and I'll happily devour the whole jar in this way - it's delicious. However I love to make a lemon, soy, sesame chicken for the BBQ, and used this lemon curd to do so tonight and it was devoured by my family and the visitors - all the adults loved it. I know my child is not a huge lemon fan, so am not even planning on wasting this beautiful spread on her! But for lemon fans, I think it's great and I'll be certainly looking out for it in my supermarket shops in the future.
I was so pleased to see this lemon curd nestled in my review goodies this time around. I love curds, and delight in trying new flavours and spins on the traditional and not so traditional. I have tried several of the Barker's curds and am never disappointed by them. This one promised to be a bit different though.
On the jar it says that they have put less sugar and more fruit in. That made me think, well more lemon fruit will make this much more sour. And I wasn't wrong, but the extra sour was so good. I was blown away by my first taste of this curd of a spoon, that I ended up going back for another finger full. And after that, I clamped the lid down quickly, because truth be told I wanted to get a giant spoon for MORE.
The flavour has that real authentic lemon flavour, a bit of the zest and sour of the natural juice. The curd is still sweet, but not overwhelmingly so. I wanted to have this with cream on some kind of cake or scone as soon as possible. So I quickly knocked up some vanilla cake mixture. Once the muffins were out of the oven and cooled, I cut some holes in the top and filled the muffins with curd. I put the tops back in place and then iced with a butter cream, which as more butter than sugar.
These little cakes were great. But this curd would be just as welcome on a piece of toast or a crumpet. I don't think the jar is going to last very long in my fridge at all. Just typing about it, is making me want to open the jar again. With Christmas literally two sleeps away, I am thinking a new jar would make a fabulous gift addition to a foodie's stocking. Another fab Barker's product that I will be sure to purchase again in future.
