I love anything with cooked apple like apple crumble, apple pie, and apple cake so was so keen to give this a go when I saw the recipe. And........ it really is the best apple cake I have ever tasted, the cake didn't even get a chance to cool down before I was shoving it in my mouth as the smell of apple and cinnamon was just so inviting!
Everyone else in the family loved the cake too, I got the usual yip it's nice from my partner but in his language that means it is really good, and Cai ate every last piece of his slice and then tried getting a share of Dad's so that shows it was a winner. It is such a nice moist cake and is absolutely full of flavour. I thought 2 teaspoons of cinnamon was quite a lot but it wasn't overpowering at all. I cut my apple in to quite large chunks so there were nice big bits of soft apple through the cake which I really liked.
The recipe is so easy, you just like it says simply throw everything into the bowl and mix together. I like a recipe like this where there is no mucking around with fancy techniques and definitely makes clean up a whole lot easier when you only have the one bowl and spoon to clean. I am definitely making this cake again, it will be a great recipe for me when I have to quickly make something for the school lunches on a Sunday night.
This is the first apple cake I ever did and boy it was easy, the instructions are simple. Put everything in a bowl and mix. Once mixed put in a cake tin and bake. I also found this cake to be so versatile as I didn't have apples one day I used a can of peaches, tipped all the juices out and cut them up and used them instead of apples. Turned out just as good.
Well back to using apples, the taste was good, the apple pulled though the cake, the cake didn't need icing and it smelt GREAT. Easy to cut. I also found the recipe was easy to change to Gluten Free when we found out our daughter had to be Gluten free. I could just use a GF baking mix and a bit of baking power and it turned out well, using the same recipe.
This recipe is cost effective as you normally have all the ingredients in your house or something you can use, I have used zuchninii too, I have also turned the cake into muffins just put them in for less time. Easy for clean up as its ONE bowl and ONE cake tin. So you want a easy cake to impressed the kids and family give this one a go, I have never failed it.
