So its time to admit I am becoming a lazy baker. All these pre mix options that are now available and at such good prices make it really hard not to become a lazy baker. Edmonds sweet muffin mix is always in my pantry. Not only is it great value but it is also really easy to make and quick too which means even my teens can make a batch up quickly when, as is often the case with teens, 'there is nothing to eat'
So you take about 3 cups of the mix, some eggs and some oil. Thats it! And it makes a really nice sweet muffin. But you can divide the mix and add different stuff to it to make a variety of muffins. We make good ole choc chip and we also add a variety of berries too. You can pretty much add anything you want and they are a success every time.
The instructions are simple to read and easy to follow. The bag is easy to open, and although it is not resealable you can roll it down to keep additional left over fresh. You can make at a minimum at least 3-4 batches of muffins from one bag and if you decide to make them all in one go and use the whole bag, they also freeze and thaw well which is great for snacks and school lunches.
I love to bake, and I do prefer to bake from scratch, however I have to be honest and say that I always make sure that I have a packet or 2 of cake mixes stocked up in the pantry in case of emergencies. One of my packet must haves is the Edmonds Sweet Muffin Mix, purely for the fact that it is so versatile and can pretty much be whipped together with your favourite ingredients to create your favourite muffin flavour (or even cupcakes).
These muffins are so quick to whip up, perfect for when you get those unexpected guests, all you do is tip 3 cups of the muffin mix into the bowl followed by 3 eggs, some oil and some water and mix it until smooth, with what ever other ingredients you wish, although these to taste really good as is without anything else and best of all they always turn out moist, light and fluffy. I have made these muffins over and over and they really are fail proof, though I have tried a vast variety of flavour combinations my favourite have to be double chocolate chip, raspberry and white chocolate and apple and cinnamon with streusel topping.
The ingredients listed on the package are simple to follow with just 5 easy steps, and the package also lists several muffin flavour ideas to try, which I think is great for people who may be lacking inspiration! The mix comes in a strong paper bag, like the ones that the Edmonds flour comes in. One packet of the mix is enough to make 36 muffins of medium size (so enough for 3 batches), though if making mini muffins it would certainly create at least twice the amount.
Certainly a staple that I intend on keeping in my pantry, they have been enjoyed and raved about by all who have tasted them, my 2 year old especially loves them! If you need something quick to whip up these are worth trying!
Edmonds sweet muffin mix is always in my pantry without a doubt! Although I make all my baking from scratch - muffins is one exception to my rule... And purely because this muffin mix really does make great tasting muffins in just minutes! I love that when the in-laws randomly phone to say they'll be round for a visit in 20 minutes I can have fresh warm muffins ready to go with their cuppa.
Definitely a complete time saver, and this mixture works every time without fail.I've been using this muffin mix for a few years now and have yet to have a batch not work out. In fact I always get comments about how nice the muffins taste! One thing I do tend to do is add slightly less oil that the packet recommends but that's just personal choice and generally speaking I have other liquids I'm adding (for flavours) so I know it will balance out. Yet another great fact is that you can literally mix whatever you like into the mixture for whatever flavour your feeling like. A popular choice with our family is good old choc chip and banana (I've used both fresh or frozen banana). On different occasions I've also used cocoa powder, frozen blueberries or any frozen berries for that matter, a range of choc chips or buttons, flavacol and fresh squeezed juices.
I generally find a bag lasts me a long time (I don't make muffins every weekend) but would say it probably is about four-five batches of 12muffins so to me that's good enough value to justify the slightly more expensive mix (in comparison to flour etc.). Definitely a product I would recommend to others to try!
Here I am cheating again I don't always cheat I promise! However I can honestly say this muffin mix is such a time saver and makes delicious soft moist muffins every time without fail. The best thing is you can add whatever you like to it as the mix itself is just the base. You can add fruit, chocolate chips, cocoa powder, or any type of spice to the mix to create whatever suits your mood.
The bag for me made about four batches of muffins so you get good value for money even though the mix is expensive to start with. It is so easy to use too and you can mix up a batch of muffins in minutes cutting out all the measuring. You just throw everything in the bowl and mix until just combined and then bake for 20 minutes.
The first muffins I made with these were double chocolate, I added some cocoa powder to the mix and some chocolate chips and they were just like store bought chocolate chip muffins really moist soft and crumbly and were a big hit with the kids. My 11 year old couldn't believe I hadn't bought them. Today I made some blueberry muffins using some frozen blueberries and they have turned out just as good, the muffin mix is so sweet and has a hint of vanilla so other than the fruit it doesn't need anything else added to it.
