I was 13 when my mum first asked me to make a batch of scones to go with that nights stew. My step dad is the king of scone making but he was not home that day. It is easy she said. Just follow the instructions in the trusty ole edmonds book...you can't go wrong! Yeah right! Ok so granted I had to triple the recipe because we have a huge family and I did mix up the amount of baking powder and the amount of salt, resulting in extremely salty rocks! My family are great and they ate them anyway, as well as drank A LOT of water.
Fast forward to almost 40 years old and I had never attempted scones again until a friend told me to try Edmonds scone mix. You wont regret it she said. And she was so right! This stuff is a blessing even my kids can make scones :) The simplicity is just the best. So so easy to do. Add some water etx. Mix. Roll. Cut. Sit. Bake. Seriously its that simple, and as long as you do not over cook you have the yummiest fluffiest scones ever.
And you don't have to have them plain either. We have savoury or sweet. Add cheese and onion or chocolare chips. The choice is yours. I love it! Thank you Edmonds for a really great product!
When it comes to baking I like to consider myself a really good baker. But when it comes to scones they are the one thing I just CAN NOT GET RIGHT!!!! When I saw that Edmonds had brought out a new scone mix and a muffin mix I decided to grab a bag of each to try.these sounded really simple, as the packet said to just add water, surely I couldn't muck these up right?
I added 2 2/3 cups of the scone mixture to a bowl and then added a cup of cold water and mixed the 2 together until well combined. I then decided to be creative by adding my own special ingredients to the dough. I split the dough in half and to one batch I added cheese, crispy bacon and chives, and to the other batch some chopped up dates. I cut them into rounds using a cookie cutter and placed them in the oven to cook. At last I had a success at making scones with results being light, fat and soft just like scones I have tried in the cafes. Both flavour combinations worked great.
Over the next 2 weeks I made lots of different scone varieties using the Edmonds mix - apple and cinnamon, spicy fruit, chocolate chip and my favourite pin-wheel scones the combinations are endless. I am so happy to have finally found a fail proof scone that I am able to make myself without it turning into a hard rock. I managed to get 4 batches of scones out of the one packet, which I thought was great value for the price I paid because if you think about it you would pay about $4 for one scone in a cafe.
I recently bought a bag of this classic scone mix because I wanted scones but didn't rust myself to make a good batch. This bag makes scones so easy to make. You simply add 2 2/3 cup of the mixture to a cup of cold water, mix and then bake in the oven. The scones come out really soft and pillowy. They are delicious plain.
However, I also started to experiment a bit. I did a mustard and cheese scone but adding a cup of grated cheese and two tablespoons of whole grain Sid's mustard as well. The additions didn't affect the scone mix at all and the scones came out just as soft and delicious as normal. The smell of the cheese and mustard addition was great and they didn't have any nasty sweetness affecting the flavour.
There are lots of serving suggestions on the bag, which are great. They give you a good indication of what amounts of additions you need to put in your mixture. I'm going to go the chopped date style next with cream and jam. My mouth is watering already.
Scones are such a good thing to make when you are having people around and they are so yummy too. The only thing is I really really such at making scones that was until I found this scone mix now my scones are never fail every time! With the mix you just add water and then add whatever you want to the scone.
I like to make vegemite and cheese, or cheese and ham pinwheel scones for the kids when they have friends over or just for their snacks and for us adults I like to make traditional date scones but you could pretty much do what ever you wanted with them. The scones themselves come out so soft and fresh and light not like the hard rocks I usually make so everyone eats these scones when I make them.
The kit is quite expensive but you do get about 3 or 4 batches out of the bag so it does work out quite good value so I keep a bag in the pantry for those occasions when I need to bake, and would highly recommend them to anyone else.
